Why a HEPA-only purifier will not fix cooking smells
Cooking odors are gases – acrolein from oil, sulfur compounds from onions, trimethylamine from fish. These are volatile organic compounds (VOCs): HEPA filters trap particles down to 0.3 microns, but a gas molecule is roughly a thousand times smaller. Air passes through HEPA and the smell rides along untouched.
Activated carbon is different. Its microscopic pores physically adsorb odor molecules and hold them until the filter saturates. The amount of carbon matters more than the marketing. A thin carbon-coated sheet in a $99 unit holds about 60 g and saturates in a week of daily cooking. The four numbers that actually matter
